I've been making my own mayonnaise. It's much easier than I ever dreamed. I can control the ingredients (for health and flavor), and it tastes fabulous, and it's an important part of my successful low carb plan.

I finally ordered a LED swing arm lamp for my work. Let's hope it works well.

I hope you'll be happy with the lamp.

I use apple cider vinegar instead of lemon juice for the mayo. It's much easier to pour in the amount I need rather than squeeze a lemon for it. But I might try it with lemon instead one day. I posted the process I use on my blog.

A dubious type of success is that we reached the point where all our co-pays are free because we reached our out-of-pocket maximum for the year.

Do try lemon. More work but tastier.

Congrats on the free co-pays. That kind of stuff is always something to celebrate.
